Herbed Beef Tenderloin

  • 5 lb. trimmed beef tenderloin, halved
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 T plus 1 t Italian seasoning
  • 2 t coarsely ground black pepper

Preheat oven to 425°.

Combine olive oil, garlic, Italian seasoning and black pepper in small bowl.  Place beef tenderloin on rack in a roasting pan.  Rub halves with olive oil mixture.

Place roasting pan in oven and cook for appriximately 40-50 minutes until meat thermometer reaches desired temperature:  135° for medium rare; 150° for medium.  Remove, tent with foil and let stand for at least 15 minutes.  Slice to desired size and serve or refrigerator for serving cold on rolls.

Serves 12 main course size or at least 24 if served on rolls.
