Escape the Heat with an Easy, Creamy Piña Colada

     It feels like we’ve been living in a furnace for most of the last two weeks.  Though summer is my favorite time of year, I’ve barely made it outside, even to water our thirsty plants.  Fortunately, I stumbled upon one of the most fabulous ways to cool down.

     As I was perusing the ice cream section recently trying to deciding on flavors to make my own version of Celebration Cake, I found Häagen-Daz’s

Pineapple Coconut Ice Cream.

Being a sucker for anything coconut, I had to take one home.  When we finally tasted it, I couldn’t believe how much it reminded me of a piña colada.  Naturally, I had to make a high-test one.

     The Häagen-Daz version of a piña colada cannot be any easier to whip up.  Soften the ice cream a bit and put the whole 14 ounce container into a blender.  Add about 1/4 cup of Mount Gay or other good rum to taste and blend.  Then blend in ice to thicken.  Serves 2.

     This piña colada is the real thing, unlike those bottled drink mixes used by so many bars that always leave a funny coating in your mouth.  As I sipped and cooled down, I could almost feel the ocean breezes off the Big Island of Hawaii, one of my favorite vacation spots ever.
