Perfect Brunch Beverage: Delta Mint TeaPosted: May 22, 2011
“Tis the season for brunch. Whether it’s for graduation, wedding, birthday or other celebrated life event, this is the best time of year to have family and friends over to share a more casual meal either inside or out. Richmond finally has a welcome weather weekend for a brunch, and on a sunny day like today Delta Mint Tea suits both breakfast and lunch menu items.
My friend J has a birthday, a confirmation and a graduation all happening in the span of this week (not to mention a state track meet and other end of school year requirements for her three boys). Up today is her second son’s confirmation, and she has planned a family brunch (including my Farmer’s Market Strawberry and Asparagus Salad) following this morning’s service. I offered to help with a couple of the menu items. Delta Mint Tea was an easy choice that I am sure her in-laws will love.
My friend K has been serving up this irrestible beverage all spring. It brings the flavors of the Deep South together in a happy combination. But for the cup of sugar dissolved in this tea, I would sacrifice my Diet Coke habit to drink it daily.
K got this recipe from Family Secrets: The Best of the Delta, by Lee Academy (1990). It’s one of those great Wimmer fundraising cookbooks that so many woman- and church-based non-profits have published. K’s grandmother had given her the book, and I know that K thinks of her every time she opens it to glance at the recipe. Simple and easy, the only thing that you need to think about is making this tea in advance so that the flavors can meld as they chill in the refrigerator.
4 family size tea bags (I used 1/2 caf, 1/2 decaf)
1 very large handful of fresh mint (leaves and stems)
Rind and juice of 2 lemon
8 cups boiling water
1 cup sugar
Steep tea bags, mint and lemon rinds in boiling water for 30 minutes. (K keeps a lid on the pot while it is steeping.) Remove all three from water and pour into pitcher. Add lemon juice and sugar, stirring as you add. Chill and serve over ice.
You cannot go wrong with this beverage at brunch. Hope you enjoy this gorgeous May morning!
